So, the longer I have been in the baby and child sleep work the more random the advice I see or hear being banded around.

If you come across advice like this from someone, IGNORE, AVOID and UNFOLLOW!

When I work with families I offer responsive methods. I am not a gentle sleep consultant but I am also not the other end of the scale either. I am aware that some methods that are being offered to families include not looking at your child when you do intermittent check-ins.
Your child is not Medusa and you will not turn to stone in you look at them! Of course you can look at them, and this will NOT hinder your progress. Does your responses need to be boring then yes, but we are not avoiding eye contact.
I am all about giving little ones room to settle independently but this is quite frankly laughable and unnecessary.
